Learning cajun cooking

I love cajun food, and have been working to perfect my favorite
cajun recipes since my first trip to Louisiana for the New Orleans Jazz Festival.
This website presents a collection recipes that, together, form one of my favorite cajun style meals:
Boudin balls and dirty rice with sweet and sour brussels sprouts.

Boudin Balls

Deep fried balls of garlic and pork sausage, usually dipped in aioli.
They are traditionally served as an hors d'oeuvre or appetizer, however I prefer
to have them as the centerpiece of the meal, due to how substantial and filling they are.

Dirty Rice

A cajun style rice pilaf, great as a stand-alone meal, as well as as a side dish or a main course.
Everyone has their own recipe for dirty rice,
but I feel like this one is a good balance between simple and delicious.

Brussels Sprouts

Growing up, brussels sprouts were one of the few vegetables I couldn't abide.
However, these sweet and sour brussels sprouts have completely changed my mind.
They are now, hands down, one of my favorite vegetable dishes.
